Richard's salty French toast
Last sunday I went to have breakfast at a friend's place. Richard made me the best French toast ever.
Had to share this one:
Ingredients:
- Bio white or light bread
- soy milk
- 2 eggs
- mozzarella cheese
- fresh wild rosemary
- salt & pepper
Poor some of the soy milk in a bowl and add the 2 egg fillings , stir everything together. Then add the fresh wild rosemary and some salt & pepper. Stir again.
Melt some butter in a pan.
Slice of thick slices of the bread and dip every slice in the mixture.
Then put the slices in the pan and let every side bake for a view minutes.
Put some mozzarella on one slice and cover it up with another slice and bake the whole on both sides again for a few minutes.
Your French toast perfection is ready. It tastes very well with whipped creamcheese or with some fruit syrup or jam.
We had it with a nice cup of Ayurvedic tea and watched this movie. Sunday perfection!

Julie's kitchen
Last sunday my best friend Sara and I went for an Ayurvedic cooking class. Our teacher for the day was sweet Julie, who opened the doors of her cosy kitchen and took us to India for the afternoon. It was very interesting, how she used different spices and told us about their qualities. Ginger and kurkuma are some of the most used spices in the Ayurvedic kitchen, they both work very balancing and purifying. Julie spend a lot of time in India learning more on Ayurvedic cooking and now passes on her knowledge. After an intense afternoon, we all went to sit at the table to eat all the delicious food. It was so perfect. The food was so different from taste, it was so yummie and very healthy. But it was also such a nice atmosphere, I had a very nice time. After a last cup of tea I went home, feeling very zen. Julie's studio "The Yellow Tree" is located close to the Antwerp city center. Next to cooking classes, Julie also gives massages. Bioshop Quintal, Porto
Got back from a beautiful week in Porto. Life is good there, but for vegetarians like me a bit hard to find nice food. Coco doesn't give up and after a stroll around the area around my guesthouse I found Quintal, a shop that sells bio-organic products and tea house where you can have lunch. I had the best tofu sandwich ever and a talk with the shop-owner Monica. She was so friendly and gave me tips where to get good veggie food.
Tofu sande Quintal:
2 slices of brown bread
rucola salade
Brussels sprouts
Tofu baked in salt and pepper
olive oil
yum!

Noordermarkt

My friend Sophie of Sunken Treasure took this beautiful pics at the saturday BIO market on the Noordermarkt in Amsterdam. Everything looks so delicious. Wish we had more of these markets in Antwerp.
